What's For Dinner?


Oven Fried Chicken, Garlic butter biscuits and collard greens!

I wasn't sure what I wanted to cook for dinner, but soon realized that I haven't had cornbread in awhile. I decided on oven fried chicken, and collards greens with cornbread! Unfortunately, I'm always finding ways to spice up my food, and decided on throwing a can of creamed corn into my cornbread mix. Guess what? The corn was spoiled, black pieces of lord knows what was floating around in my precious mix. I ended up trashing it, and quickly decided on making biscuits. But I had to think quick:

Fast Garlic Butter Biscuits:
2 cups pancake mix
1/2 cup milk
garlic seasoning ( I eyeballed it)
Sprinkle of paprika
Tblsp of melted butter
Mix
Scoop with spoon or ice cream scoop onto a greased pan and bake for 10-15 mins on 340.
I didn't want them to burn, so I checked them occasionally.

Oven Fried chicken
Whole chicken or parts
Clean with lime juice, or vinegar, hot water
Dunk in buttermilk
Dunk in bowl of seasoned flour
Place on greased pan
Cook for an hour on 400.

For the collards greens, I took the easy route and warmed up some good ole Glory greens. :)
